Black Bean Couscous Salad

- 1 cup couscous
- 1 1/2 cup boiling water
- 2 tomatoes, diced
- 1 red bell pepper, seeded & diced
- 4 scallions, chopped
- 15 ounces black beans, drained & rinsed
- 2 cups corn kernels
- 2 tablespoons minced fresh cilantro
- salt and pepper, to taste
- 1 lime, juiced
In a medium bowl, combine the couscous and boiling water, cover, and let stand for 10 minutes to absorb the liquid. In a mixing bowl, combine the prepared couscous with the remaining ingredients. Chill before serving.
