Chipotle Brownies

- 6 tablespoons butter
- 12 ounces bittersweet chocolate, coarsely chopped or use chips
- 2 large eggs
- 1 cup sugar
- 2 teaspoons vanilla extract
- 2 teaspoons ground cinnamon
- 1 teaspoon chipotle chili powder
- 1/4 teaspoon cayenne pepper
- 8 tablespoons all-purpose flour
- 1 cup chopped walnuts
Preheat the oven to 325 degrees F. Grease and flour a 9x9-inch baking dish. Melt the butter in a saucepan over medium-low heat. Add the chocolate chips and cook, stirring frequently, until the chocolate has melted. Remove the pan from the heat and let the chocolate cool a little. In a mixing bowl, bet the eggs, sugar, vanilla, cinnamon, chipotle powder, and cayenne pepper with an electric mixer on medium speed. With the mixer running, add the cooled chocolate and mix until incorporated. With the mixer running, add the flour. Stir the nuts in by hand. Transfer the brownie batter to the prepared baking dish. Place the dish in the oven and bake at 325 degrees F for 35 minutes. Test for doneness by inserting a toothpick in the middle. It should come out with moist crumbs. Remove the pan from the oven and let the brownies cool before slicing. Store the cooled brownies in an airtight container.
