Reuben Cocktail Bites

- 1 pound pizza dough
- 8 ounces corned beef, chopped (canned or cooked)
- 8 ounces shredded Swiss cheese
- 1 1/2 cup Krrrrisp Kraut or Silver Floss sauerkraut
- Thousand Island salad dressing, as needed
Preheat the oven to 400 degrees F. Roll the pizza dough out to a rectangle that is 16x6-inches. Sprinkle the dough with the corned beef, leaving a 1/2-inch border around the edge of the dough free from ingredients. Cover the corned beef with Swiss cheese. Drain the sauerkraut well then evenly spread it over the Swiss cheese. Roll the pizza dough up lengthwise. Slice the dough with a sharp knife into 3/4-inch slices. Place the Reuben dough rolls on a baking sheet in a single layer, so the rolls are touching. Place the baking sheet in the oven and bake the Reuben cocktail bites at 400 degrees F for 15 minutes or until the dough begins to brown. Remove the corned beef appetizers from the oven and let cool for 5 minutes on the baking sheet. Remove them from the baking sheet and serve warm with Thousand island dressing on the side for dipping.
