  • 4 potatoes, peeled and cubed
  • 1/4 cup oil
  • 1 teaspoon cumin seeds
  • 1 piece (1 inch size) ginger root
  • 3 cloves garlic, minced
  • 3/4 teaspoon ground turmeric
  • 1 teaspoon chili powder
  • 1/2 cup water
  • 1 tomato, diced
  • 1 teaspoon garam masala
  • 2 teaspoons ground coriander
  • 1 head cauliflower, cut in florets
  • 1 cup frozen peas, optional

Heat the oil in a large skillet over medium-high heat. Add the cumin seeds and cook for 1 minute, stirring constantly. Add the garlic and ginger and cook for 1 minute, stirring constantly.

Add the potatoes to the skillet. Cook, stirring constantly, until the spices coat the potatoes and the mixture is starting to look dry.

Add the turmeric and chili powder and cook, stirring constantly, for 1 minute. Add the water, tomatoes, garam masala, and coriander. Let simmer for 5 minutes.

Add the cauliflower and peas. Increase the heat to high for 1 minute then reduce the heat to a simmer. Cover the skillet and let the potatoes and cauliflower simmer for 15 minutes or until most of the liquid has been cooked off.

Serve hot.
