***Basic Strata Base***
- 12 slices bread, cubed
- 1 pound cheddar cheese, shredded (or other cheese)
- 4 cups milk
- 8 eggs, beaten
- 1 teaspoon dry mustard
- 2 teaspoons dehydrated minced onion
- cayenne pepper, to taste
- salt and pepper, to taste
- 3 tablespoons butter, cut in bits
Grease a 9x13 baking dish. For the basic strata, spread the bread cubes in the greased baking dish. Top with the cheese. In a bowl, whisk together the milk, eggs, mustard, onion, cayenne, salt, and pepper. Mix well then pour over the cheese and bread in the baking dish. Dot the top with the bits of butter. Cover the baking dish and refrigerate overnight. Preheat the oven to 350 degrees F. Bake the strata at 350 degrees for 1 hour. Variations: Chicken: Reduce basic strata recipe to 4 eggs and 3 c milk. Add: 2 c diced cooked chicken; 0.25 c finely chopped pimiento; 0.5 c finely chopped celery; 1 (10-oz.) can cream of chicken soup; 0.5 c mayonnaise. Spinach or Broccoli: Add to basic strata: 2 (10 oz.) pkg. frozen chopped spinach OR 1 (10 oz.) pkg. chopped broccoli, cooked and well-drained; 8 oz mushroom, sliced and sauteed. Sausage: Add to basic strata: 1.5 lb sausage, cooked and crumbled; 8 oz mushrooms, sauteed with 1 tb butter and 0.5 c chopped green bell pepper.
