Basic Light and Fluffy Biscuits

- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 4 tablespoons unsalted butter, cold
- 1 1/4 cup buttermilk, cold
Preheat the oven to 425 degrees F. Combine the flour, salt, baking powder, and baking soda in a bowl. Mix with a fork. Add the butter and cut into the flour mixture using a pastry blender or fork. Cut the mixture until it resembles coarse crumbs. While mixing, slowly add the buttermilk until the dough starts to come together. The dough should be a little on the dry side. Turn the dough out onto a floured work surface. Pat the dough to an even thickness. Do not overwork the dough. Cut the dough into biscuits using a 2-inch biscuit cutter (or other cutter). Place the biscuits on an ungreased baking sheet. Place in the oven and bake at 425 degrees F for 20-25 minutes or until lightly golden brown. Remove from the oven and let cool for 3-4 minutes before serving or let cool to room temperature and store in an airtight container.
