Vegetable Couscous

- 2 tablespoons olive oil
- 1/2 cup diced zucchini
- 1/2 cup diced yellow squash
- 1/2 cup diced red bell pepper
- 1/2 cup peeled and thinly sliced carrots
- 1/2 chopped onion
- 2 cloves garlic, minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon curry powder
- 1/4 teaspoon crushed red pepper flakes
- freshly ground black pepper, to taste
- salt, to taste
- 3 cups cooked couscous
- 1/2 cup vegetable broth
- 1/4 cup chopped fresh parsley
Heat the oil in a large skillet over medium heat. Add the zucchini, yellow squash, bell pepper, carrots, onion, and garlic. Cook, stirring frequently, for 5 minutes. Add the cumin, curry powder, crushed red pepper, salt, and pepper. Mix well and continue to cook, stirring occasionally, for 5 minutes. Add the couscous and broth. Mix well then let simmer without stirring for 5 minutes or until the liquid is absorbed. Stir the vegetable couscous with a fork, garnish with parsley, and serve immediately.
