8 garlic cloves, finely chopped
3 T. lime juice
2 T. Dijon mustard
2 T. honey
Salt and pepper to taste
4 boneless skinless chicken breasts
2 T. olive oil
Mix garlic, lime juice, Dijon mustard, honey, salt and pepper in shallow dish. Add chicken and toss to coat. Marinate for 10 minutes, turning occasionally. Drain chicken reserving marinade. Heat olive oil in large sauté pan and add chicken. Cook until brown on both sides, turning occasionally. Add reserved marinade to sauté pan and reduce heat. Cook for 7 minutes longer or until chicken is cooked through. Serve with hot cooked rice or pasta. The sauce can be thinned with white wine. Prepare in advance and store, covered in refrigerator. Reheat just before serving. Gilroy, California, is the home of the world famous Garlic Festival.
