- 1/3 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/2 cup baking cocoa
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
Preheat the oven to 350 degrees F. Line a muffin tin with liners. Combine the butter and sugar in a large mixing bowl. Beat on medium speed with an electric mixer until fluffy and creamed together. With the mixer running, add the eggs one at a time, beating well after each addition. Add the vanilla. Combine the flour, cocoa powder, baking powder, and salt in a bowl. With the mixer running, slowly add the flour mixture to the butter mixture. Beat until smooth, scraping down the sides of the bowl as needed. Fill each muffin cup 2/3rds full with the batter. Place the muffin tin in the oven and bake at 350 degrees F for 20-25 minutes or until the top springs back when gently touched. Remove the pan from the oven and let the cupcakes cool for 5 minutes in the pan then transfer to a cooling rack. Store the cooled cupcakes in an airtight container.
