Baked Tacos

- 1 pound ground beef or pork or sausage
- 1 can (15 ounce size) kidney or pinto beans, rinsed and drained
- 1 cup salsa, mild or spicy
- 1 envelope taco seasoning mix
- 8 large flour tortillas
- olive oil or non-stick cooking spray
***Toppings***
- shredded lettuce
- diced tomatoes
- sour cream
- sliced jalapenos
- guacamole
- shredded Monterey Jack or Cheddar cheese
Preheat oven to 450 degrees F. Grease a baking sheet or cover it with foil. Heat a large skillet over medium-high heat. Add the ground meat and cook for 5-7 minutes or until no longer pink. Drain off any excess fat. Add the drained beans, salsa, and taco seasoning. Bring to a boil then reduce the heat to a simmer and cook for 5-7 minutes. Lightly mash the beans a little and stir the mixture until thickened. Lay the tortillas out on the baking sheet. Spoon some of the meat mixture in the center of each tortilla. Fold in half and press down gently. Lightly brush the tortillas with olive oil or spray with nonstick cooking spray. Place the baking sheet in the oven and bake at 450 degrees F for 8-10 minutes or until lightly browned. Serve garnished with lettuce, tomatoes, sour cream, jalapenos, guacamole, and/or cheese.
