Serves/Makes: 8
Ready in: 30-60 minutes
- 1 pound uncooked elbow macaroni pasta
- 1 cup whole milk
- 2 cans (12 ounce size) evaporated milk
- 3 eggs
- 1 cup cold butter, cut into small pieces
- 1/2 pound shredded Colby cheese
- 1/2 pound shredded Monterey Jack cheese
- 1/2 pound shredded sharp Cheddar cheese
- 1 pound Velveeta cheese, cubed
- salt, to taste
- 1 tablespoon white pepper
- 1 tablespoon sugar
- 1 cup shredded mild Cheddar cheese
Preheat the oven to 350 degrees F. Bring a pan of salted water to a rolling boil over medium-high heat. Add the pasta and cook as directed on the package. Drain the pasta well then place it in a 9x13-inch baking dish. Whisk together the whole milk, evaporated milk, and eggs in a bowl. Whisk until uniform in color. Sprinkle the pasta with the butter, Colby cheese, Monterey Jack cheese, sharp Cheddar cheese, and Velveeta. Pour the egg mixture over the cheese and butter. Sprinkle with the salt, pepper, and sugar and mix gently. Sprinkle the mild Cheddar evenly over the pasta. Place the baking dish in the oven and bake at 350 degrees F for 35-45 minutes or until golden brown and bubbly. Serve Sweet Pie's mac and cheese hot.
