Strawberry Daiquiri Cheesecake

- 2 packages (8 ounce size) cream cheese, softened
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 2 eggs
- 1/3 cup strawberry daiquiri frozen concentrate, thawed
- 1 (9-inch size) graham cracker crust
Preheat the oven to 350 degrees F. Combine the cream cheese, sugar, and vanilla in a mixing bowl. Beat on medium speed with an electric mixer until creamy. With the mixer running, add the eggs one at a time, beating well after each addition. Add the strawberry daiquiri mix and beat until the filling is uniform in color. Pour the cheesecake batter into the graham cracker crust. Place the cheesecake in the oven and bake at 350 degrees F for 40 minutes or until the center is just about set. Remove the cheesecake from the oven and let cool to room temperature. Place the cheesecake in the freezer to chill for 3 hours or overnight. Garnish the cheesecake with sliced strawberries, if desired.
