Crispy Cauliflower Slaw

- 1 cauliflower
- 1/4 cup minced green onions
- 1/2 cup minced celery leaves
***Dressing***
- 1 cup sour cream or plain yogurt
- 6 tablespoons salad oil
- 2 tablespoons cider vinegar or lemon juice
- 1/4 teaspoon paprika
- 1/8 teaspoon black pepper
- 1/8 teaspoon dry mustard
- salt, to taste
- paprika to sprinkle on top
- chopped green onions for garnish
- 1 carrot, peeled and grated for garnish
Immerse the cauliflower in cold salted water, head down, for about 10 minutes. Drain well. Remove the core and finely chop the cauliflower. In a large mixing bowl, combine the cauliflower with the onions and celery leaves, mixing well. Combine the dressing ingredients in a separate bowl, blending well. Pour the dressing over the vegetables and toss gently but thoroughly. Cover and chill at least 1-2 hrs. to blend flavors. Transfer to a salad bowl. Sprinkle tops with paprika, green onions and grated carrot.
