Cheesy Fajita Meatballs

- 2 pounds lean ground beef
- 1 envelope dry fajita seasoning mix
- 1 green onion, finely diced
- 2 large eggs, beaten
- 2 cloves crushed garlic
- 1 cup finely shredded colby-jack cheese or Mexican cheese blend
Preheat the oven to 425 degrees F. Combine the ground beef, fajita seasoning, green onion, eggs, garlic, and cheese in a bowl. Mix well, then form the meat into equal-sized meatballs. Place the meatballs on a broiler pan or rack in a roasting pan. Place in the oven and bake at 425 degrees F for 20 minutes or until cooked through. Serve on tortillas with any desired toppings, use in another recipe, or serve as appetizer meatballs with salsa for dipping.
