- 1 cup all-purpose flour
- 1 1/4 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup milk
- 1/4 cup packed dark brown sugar
- 2 tablespoons vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
- 3 bananas, peeled and mashed
***Butter Rum Sauce***
- 3/4 cup maple syrup
- 2 tablespoons butter
- 2 tablespoons dark rum
Combine the flour, baking powder, cinnamon, and salt in a bowl. Mix well. In another bowl, stir together the milk, brown sugar, oil, egg, and vanilla. Mix until smooth. Stir the milk mixture into the flour mixture and mix until just combined. Stir the mashed bananas into the batter and mix well. Let the batter rest at room temperature for 30 minutes. Combine the maple syrup, butter, and rum in a small saucepan over low heat. Cook, stirring, until the butter melts. Keep warm. Heat a greased non-stick skillet over medium heat. Add 1/4 cup of the pancake batter to the skillet. Cook for about 1 minute or until bubbles begin to form on the surface. Turn the pancake over and cook for 30-45 more seconds or until golden brown. Remove the pancake to a plate and keep warm. Repeat with the remaining pancake batter. Serve the pancakes with the warm butter rum sauce.
