Granny's Old Fashioned Pork Sausage

- 6 1/2 pounds boneless pork shoulder roast
- 1/3 cup dried sage
- 1/4 cup salt
- 2 tablespoons brown sugar
- 2 tablespoons ground black pepper
- 1/8 teaspoon ground red pepper
Trim any excess fat from the pork and cut into chunks. Place the meat through a meat grinder. Combine the ground meat and remaining ingredients in a bowl and mix well. Shape the sausage into patties. The sausage can be cooked immediately but for best flavor wrap the sausage patties in plastic wrap and freeze for 1-2 weeks. Thaw before cooking.
