1 pkg ground chicken
1 pkg dried Italian salad dressing mix
1 tbsp. olive oil
6 cans (10 1/2 oz) chicken broth
1/2 cup frozen carrot slices
1 pkg (9 oz) cheese-filled tortellini
1 can (14 1/2 oz) diced tomatoes, drained
1/2 cup chopped fresh or frozen spinach

In bowl, mix ground chicken or turkey and salad dressing until well combined. Form into small (1 inch diameter) meatballs. In skillet, heat olive oil over medium heat. Add meatballs and brown on all sides (about 7-10 minutes). Remove meatballs from pan and drain on paper toweling.

Heat chicken broth in large saucepan until just boiling. Add tortellini and carrots, cook for 5 minutes. Reduce heat and add meatballs. Simmer for 10 minutes. Add tomatoes and spinach. Stir until spinach wilts slightly Serves 4
