1 1/4 c. flour
1/2 c. cornstarch
1/3 c. butter, softened
1 tsp. grated lemon peel
1 T. lemon juice
For the Frosting:
3/4 c. powdered sugar
1/4 c. butter, softened
1 tsp. grated lemon peel
1 tsp. lemon juice
Combine all cookie ingredients in a large mixing bowl, on low speed, and blend well for 2-3 minutes. Divide dough in half and shape each into 1-inch rolls. Cover rolls with plastic wrap and chill for 1-2 hours.
Preheat oven to 350 degrees and slice dough into 1/4-inch slices. Bake cookies 2 inches
apart for 8-12 minutes, or until set. Cookies will be light in color even
when done. Set cookies aside to cool.
In a small mixing bowl, combine all frosting ingredients and mix on medium speed until fluffy, about 1-2 minutes. Frost tops of cookies with frosting. Makes about 4 dozen.
