12 slices sourdough bread, crusts removed
2-3 tbsp butter, softened
1/2 cup butter
1/2 lb mushrooms, sliced
2 cups thinly sliced yellow onions
Salt and pepper
1 1/2 lb milk Italian sausage
3/4 - 1 lb cheddar cheese, grated
5 eggs
2 tsp Dijon mustard
2 1/2 cups mustard
1 tsp dry mustard and ground nutmeg
2 tbsp finely chopped parsley

Butter bread and set aside. In a skillet, melt butter and brown mushrooms and onions. Season with salt and pepper; set aside.

Cook sausage cut into bit size pieces. Grease an 11x17 shallow casserole dish, layer 1/4 of the bread, mushroom mixture, sausage and cheese.

Mix eggs, milk, mustards, nutmeg, 1 tsp and 1/8 tsp pepper. Pour over cheese. Cover and chill overnight. Sprinkle with parsley and bake uncovered at 350 for 1 hour until bubbly. Serve immediately.
