1 lb bacon or sausage
1 tbsp butter
2 onions, chopped
1 (10 oz) pkg frozen spinach, thawed and squeezed dry
2 cups sliced mushrooms
4 cups frozen hash brown potatoes; thawed
1 tsp salt and oregano
1/4 tsp garlic salt
1/2 tsp pepper
4 eggs
1 1/2 cups milk
1 pinch dried parsley
1 cup shredded cheddar cheese

Grease a 13x9 inch baking dish. Brown the meat and crumble. Drain skillet and add butter. Fry onions and mushrooms until tender. Stir in spinach. Place potatoes in bottom of prepared dish. Sprinkle with spices.

Top with bake and onion mixture. Beat eggs with milk and parsley. Pour over casserole and top with cheese. Cover and refrigerate overnight. Preheat oven to 400. Bake for 1 hour or until set. Note: Can be prepared the same day but only bake for 45 minutes.
