8 cloves garlic, minced
1 tsp crushed red pepper flakes
2 tbsp whole black peppercorns, crushed
1/2 cup chopped rosemary
1 cup olive oil
4 lbs beef fillets
1/4 cup kosher salt
Combine first 5 ingredients in a resealable bag. Add beef and marinate in refrigerate for 24 hours.
Preheat oven to 500. Remove the beef from the marinade, rub with salt, and place on half a sheet pan. Roast for 30 minutes or internal termperatures reach 120 degrees for medium rare. Remove from the oven and allow to rest for 15 minutes before serving. (After resting the meat will continue to cook medium.) Serve 8
