2 large eggs
1 cup buttermilk
1 cup vegetable oil
1 3/4 cups yellow cornmeal
1 tbs. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/2 tsp. cayenne pepper, optional
1/2 cup shredded cheddar cheese
1/4 cup seeded and sliced jalapeno pepper
1 can creamed style corn
In a large bowl, beat the buttermilk, eggs and oil. Stir in the remaining ingredients. Mix well and pour into a greased cast iron skillet and bake at 350 degrees for 30 minutes or until a toothpick comes out clean.
