1 lb. ground chuck
1/4 c. onion, finely chopped
1 small can chopped green chilies
4 eggs
1 can evaporated milk
1 c. salsa or picante sauce
2 T. chili powder
Dash hot sauce
1 1/2 T. cumin
1/4 tsp oregano
1/3 c. pitted, sliced black olives (optional)
2 c. Fritos, crushed
1 c. finely shredded sharp cheddar cheese
Cook beef until almost browned. Add onion and green chilies, cook 4 more minutes on medium high heat. Drain. Spread beef and onion on the bottom of a 9 X 13 inch. Beat together eggs, seasoning, hot sauce and salsa thoroughly. Top with olives, then Fritos. Bake uncovered at 350 degrees for 20 minutes. Then sprinkle cheese on top and cook 5 minutes more. Serves 6.
