1 cup butter, softened
1 cup sugar
2 eggs
1/2 cup buttermilk
1 cup (2 medium) bananas, mashed
1 tsp. vanilla extract
2 cups all purpose flour
1 cup quick oats
1 1/2 tsp. baking soda
1/2 tsp. salt
6 oz. semi sweet chocolate chips
1/2 cup chopped nuts (optional)

Preheat the oven to 350F. Grease a 9×13 inch pan.

In a mixer, beat the butter until fluffy then add the sugar. Add eggs, one at a time, then the buttermilk, vanilla, and mashed bananas, mixing well. Stir in the flour, oats, salt and baking soda. Mix well and gently add the chocolate chips. Spread batter into prepared baking pan. Sprinkle the top with nuts (if using) and bake for 30-35 minutes or until a cake tester comes out clean. Allow to cool for at least 10 minutes before serving.
