4 catfish fillets (4-6 oz each)
1 tbsp fresh lemon juice
1/2 tsp salt and freshly ground black pepper
1/4 cup freshly grated Parmesan cheese
2 tbsp butter
1 1/2 tbsp mayonnaise
1/4 cup sun-dried tomatoes, julienned (may substitute 2 pieces of thinly sliced tomato per fillet)
Preheat broiler to 500. Brush both sides of fillets with lemon juice and sprinkle with salt and pepper. Place fillets (flat side up) on oiled broiler pan rack. Broil about 4 inch from heat for 6 minutes. Remove pan from oven and turn fillets. In a small bowl, mix together next 3 ingredients. Set aside. Spread cheese mixture over fillets. Sprinkle with tomatoes. Broil an additional 4-6 minutes or until flakes easily with a fork. Serves 4
