2 cups cubed or shredded ham
1 tbsp each butter and olive oil
1 small onion, chopped
2 stalks celery, chopped
1/2 to 1 cup chopped mushrooms
1-2 cloves garlic, minced
Sprinkling of seasonings: seasoned pepper, thyme, parsley, oregano, and seasoned salt, to taste/preference
3 1/2 to 4 cups cooked macaroni
3/4 cup shredded Cheddar cheese
1 tbsp grainy mustard
1/2 pint sour cream
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 (10.75 ounce) can milk
1/4 cup dried bread crumbs
10 crushed saltines
2 tbsp melted butter

Preheat oven to 375 degrees. In a skillet, heat butter and oil. Add chopped vegetables, garlic and seasoning and cook until tender. Remove from heat and allow to partially cool.

In a casserole dish, combine the ham, macaroni, cheese, mustard, sour cream soup and milk. Add the sautéed vegetables and mix together well. Bake, covered, at 375 degrees for 20 minutes.

Mix together melted butter, bread crumbs and cracker crumbs. Uncover casserole and top with the bread crumbs, and bake, uncovered for 10 more minutes.
