1/2 cup butter, softened
1 cup sugar
2 eggs
1 cup mashed ripe bananas
1/4 cup milk
1 tbsp grated orange peel
1 tsp vanilla extract
1/2 tsp almond extract
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup flaked coconut
1/2 cup chopped walnuts
1/2 cup crushed pineapple
In a mixing bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in banana, milk, orange peel and extracts. Combine dry ingredients; add to the creamed mixture just until moistened. Fold in the coconut, nuts and pineapple. Transfer to a greased loaf pan. Bake at 350 for 1 hour and 20 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
