1 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry, reserving liquid
2 tbsp each chopped onion, butter and flour
1/2 cup each evaporated milk and reserved spinach liquid
1/2 tsp each pepper and salt
3/4 tsp each celery salt and garlic salt
6 oz jalapeno cheese
1 tsp Worcestershire sauce
Cayenne pepper or hot sauce
Saute onion with butter, adding flour, milk and spinach liquid. Add seasonings and add cut up chunks of cheese, cooking until melted. Add spinach, Worcestershire sauce and pepper. Serve hot with corn ships or tortilla chips.
NOTE: This is better if made 1 day in advance and stored in refrigerator and reheated.
