4 flounder fillets
1 cup bread crumbs
2 tbsp olive oil
3 tbsp lemon juice
1/2 tsp oregano
1 tbsp capers
1 tbsp toasted pignolia (pine) nuts
2 tbsp chopped parsley
1/2 tsp salt (or to taste)
1/8 tsp pepper (or to taste)
1/2 cup white wine (such as Pino Grigio or Soave)
Pre-heat oven to 350.
In a mixing bowl, combine the bread crumbs, olive oil, lemon juice, oregano, capers, pine nuts, chopped parsley and salt and pepper until moist. Add more lemon juice if necessary. Place some stuffing on each fillet, roll up and secure with a toothpick.
Place in a baking dish that has been rubbed with olive oil. Sprinkle the remaining stuffing on top of the fillets. Add one-half cup wine to the pan and bake at 350 degrees for 20 minutes or until the fish flakes when forked. Serves 4
