1 cup diced fresh roma tomatoes
1/2 cup diced fresh cucumber (peeled and seeded)
1/4 cup diced fresh red onion
1/4 cup mined or diced kalamata olives
1/4 cup diced red bell pepper
2 tbsp fresh oregano
1 tbsp fresh chives
1 tsp freshly ground course black pepper
4 tbsp extra virgin olive oil

Combine all ingredients in a stainless steel mixing bowl and toss well. Adjust seasoning if necessary with salt and pepper. Makes just over 2 cups.

Note: This is a quick and easy recipe that is excellent on fish or chicken. It can be made up to one day before serving.
