8 cups bread or cornbread, cut into 1 inch cubes
1/4 cup butter
1/2 cup each diced celery and onion
2 cloves garlic, chopped
2/3 lb mushrooms, chopped
2/3 tsp fresh sage and rosemary leaves, chopped
1 tsp fresh oregano leaves, chopped
1/4 cup chopped fresh parsley
2 eggs, beaten
1 cup chicken broth
1/4 tsp pepper
2 apples, peeled, cored and diced
1 cup chopped walnuts, toasted
Heat oven to 325. In a large place cubes. In medium skillet, melt butter and sauté the onion and garlic until onion is tender, about 10 minutes. Add celery, mushrooms, apples, and herbs; cook an additional 5 minutes. Remove ingredients to bowl;. Add to bread. Combine remaining ingredients and bake in a greased baking dish for 25 minutes or until desired crispness.
