1 cup diced cooked potatoes
1 cup shredded carrots and thinly sliced celery
1/2 cup chopped onion
1/4 cup snipped parsley
1 – 1 1/2 tsp poultry seasoning
1/2 tsp salt
3 eggs, beaten
1 – 1 1/4 cup chicken broth, milk or light cream
1/2 cup chopped chicken
In a bowl, toss together the first 7 ingredients. Add eggs and liquin to bowl, stirring gently till combined. Add chicken; toss. Transfer to a well-buttered 2 quart casserole dish. Bake at 350 for 45-50 mi utes or till brown on top. Serves 8-10
