2 cups self-rising cornmeal
1 cup self-rising flour
1/2 tsp salt
3 tbsp sugar
3 large eggs, lightly beaten
1/2 cup milk
1 1/2 cups shredded cheddar cheese
2 jalapeno peppers, seeded and chopped
1 (17 ounce) can cream-style corn
1 large onion, chopped
Vegetable oil (for frying)

Combine first 4 ingredients in a large bowl. Combine eggs and milk; add to dry ingredients, stirring just until moistened. Stir in cheese, pepper, corn, and onion. Do not over stir.

Pour oil to depth of 2 inches into a small Dutch oven. Heat to 375. Carefully drop batter by rounded tbsp into oil. Fry hushpuppies a few at a time 3 minutes or until golden brown, turning once. Drain on paper towels.
