1/2 (17.25-ounce) package frozen puff pastry, thawed
1 egg, beaten
1 tbsp water
1/3 cup grated Romano cheese
2/3 cup finely grated Gruyere or Swiss cheese
1 tsp minced fresh basil
Preheat oven to 375. Line baking sheet with parchment paper.
Using a lightly floured rolling pin, roll sheet of puff pastry on lightly floured surface to 10 x 12 inches. In small bowl, combine beaten egg with water. Brush pastry with egg wash. Sprinkle Romano cheese, Gruyere cheese, and basil over pastry. With rolling pin, lightly press cheese into pastry.
With floured knife or pizza wheel, cut pastry into 12 strips. Cut each strip in half. Twist each strip and place on prepared baking sheet. Bake 12 to 15 minutes or until golden brown. Turn each cheese straw and bake an additional 2 minutes. Cool and store in covered container at room temperature.
