1 cup thinly sliced red onion
1/2 red bell pepper, chopped
Salt and pepper, to taste
1 tsp olive oil
3 skinless, boneless chicken breast halves, cooked and cubed
1 cup hickory-flavored bbq sauce
1 tbsp honey
1 tsp molasses
1/3 cup packed brown sugar
1/2 bunch fresh cilantro, chopped
1 (12 inch) prebaked pizza crust
1 cup shredded mozzarella or smoked gouda cheese
Saute first 4 ingredients in oil in a skillet until vegetables are tender. Drain well. Preheat oven to 425. In a saucepan, combine chicken and next 5 ingredients. Bring to a boil; remove from heat. Spread mixture evenly over crust and top with cheese and onions. Bake for 10-15 minutes or until cheese melts. Serves 4
