2 lbs lean ground beef
1/4 cup minced onions, if desired
salt and pepper
8 English muffins, split and lightly toasted
1/2 cup mango chutney
8 strips bacon, cut in half and cooked
Welsh Rarebit Sauce [recipe follows]

Combine ground beef, onion, salt and pepper. Shape into eight patties. Cook to desired doneness. Place patties on toasted muffin halves and top each burger with one tbsp of chutney. Spoon on cheese sauce evenly over each burger. Criss-cross bacon strips over cheese sauce. Top with muffin half.
Serves 8

Welsh Rarebit Sauce
1/2 lb sharp cheddar cheese, shredded
1 tbsp butter or margarine, softened
3 tbsp dry sherry
2 tsp dry mustard
nutmeg, to taste
cayenne, if desired

In small saucepan, prepare sauce by combining cheese, butter or margarine, sherry, dry mustard and spices. Melt slowly over warm water, stirring constantly until sauce is smooth. Keep warm.
