2 tbsp olive oil
1 tsp minced garlic
2 tsp minced shallot
18 jumbo shrimp, peeled and cleaned
1/2 cup white wine
1 (24 oz) jar tomato sauce
1 tsp oregano
Fresh basil, chopped into long, thin pieces
6 oz shredded mozzarella cheese
Toasted breadcrumbs
Preheat oven to 350. Heat frying pan over medium-high heat. Add 2 tbsp olive oil, garlic and shallots. Add shrimp and quickly sear on both sides. Do not cook through. Add the wine and loosen any bits on the bottom of the pan. Remove shrimp and transfer to baking dish. Add next 3 ingredients to frying pan and cook until reduced by half. Pour over shrimp and top with cheese. Bake until cheese is browned, about 10 minutes. Top with breadcrumbs and drizzle with olive oil. Serves 4
