1 loaf angel food cake
3/4 cup butter, melted
1 egg white, unbeaten
3 tbsp rum
1 (1 lb) box confectioners sugar
2 cups pecans, finely chopped
Cut entire cake into 1 inch cubes. Melt butter and allow to cool. Stir in egg white and rum. Beat in confectioners sugar to make a soft frosting. Frost sides of cake cubes; the roll in chopped pecans to coat. Freeze or refrigerate until ready to serve.
