8 oz fine egg noodles
2 bay leaf
2 (15 oz) can red kidney beans, rinsed and drained
1 (6 oz) can chopped mushrooms, undrained
2 cloves garlic, minced
2 large onions, chopped
2 lbs sweet Italian sausage, cut into 1 inch pieces
2 (10 oz) pkg frozen zucchini, partially thawed
2 tsp oregano
2 veal bones
4 cups chopped escarole
2 tbsp corn oil
2 tsp salt
16 cups water
1/4 tsp pepper
Grated parmesan cheese

In a Dutch oven, hot oil and add sausage and onion; stirring frequently, cook until sausage is lightly browned and onion is tender. Remove sausage from pan. Add water and next 8 ingredients. Bring to a boil; reduce heat, cover and simmer 45 minutes. Add next 3 ingredients and the egg noodles. Cook, uncovered, stirring occasionally about 10 minutes or until noodles are tender. Serve with parmesan cheese. Serves 6
