1 1/2 cups sugar snap peas, cooked and drained
1 cup orange juice
1 tsp corn starch
1 tbsp packed brown sugar
1/4 tsp ground ginger
1 cup cubed cooked chicken or turkey
1 orange, peeled and sectioned
1 small red sweet bell pepper, cut into 3/4 inch pieces
6 cups shredded spinach or romaine
1 tbsp chopped peanuts

Combine first 5 ingredients in a small saucepan. Heat to a simmer; stirring constantly. Let simmer for 2 minutes or until slightly thickened. Transfer to a bowl, let cool.

Arrange spinach or romaine on salad plates. Combine chicken, orange sections, sweet pepper and peas. Pour 1/2 cup dressing over mixture; stir gently. Spoon chicken mixture over greens. Drizzle on remaining dressing. Top with a sprinkling of peanuts. Serves 4
