8 cups of mixed greens
4 cups cooking shrimp, halved
3/4 cup mayonnaise
4 thinly sliced green onions
2 tsp grated lemon rind
1/2 tsp ground red pepper
Salt
Pepper
Arrange greens on each persons plate or in individual bowls. Stir together cooked shrimp, 3/4 cup mayonnaise, 4 thinly sliced green onions, 2 diced celery ribs, 2 tsp grated lemon rind, 1/2 tsp ground red pepper, and salt and black pepper to taste. Serves 4-6
Variations:
Add fresh dill and capers with the chives.
Offer avocado and chopped cilantro.
Use fresh cucumber with the dill or tarragon.
Offer boiled egg slices and olives.
Grill the shrimp before adding to the salad
Instead of using the above dressing, use a vinaigrette dressing and use the sliced onions as part the salad
