Olive oil spray
1 lb boneless, skinless chicken breasts
2 cups Italian-flavored breadcrumbs
1/2 cup Parmigiano Reggiano cheese
1/2 tsp paprika
Salt and pepper
1-2 cups olive oil
Preheat the oven to 350.
Spray a baking sheet with olive oil spray. Wash and thinly slice the chicken breasts into thin cutlets (they should look like thin breasts). Set them aside on a plate.
Next, mix the breadcrumbs, Parmigiano Reggiano cheese, paprika, salt and pepper on one plate.
Pour the olive oil into a wide low-sided bowl. Dip the chicken slices into the olive oil, coating each piece and then coat with the breadcrumb mixture.
Take one end of the breast and roll up. Put the rolled-up chicken onto the baking sheet with the end piece down. So now you have what looks like a rolled up ball of chicken.
Repeat for each piece of chicken. When placing the rolls on the baking sheet, have the pieces touching each other on either side.
Place them in the oven and bake for 20-30 minutes. They will be a little crunchy on the outside and super moist on the inside.
