1 (9 inch) unbaked pie shell
4 eggs
1 1/2 cups light cream or evaporated milk
1/2 tsp salt
1/4 tsp pepper
1 1/2 0 2 cups filling ingredients
Preheat oven to 400 and bake shell on lowest rack for 8 minutes. Remove from oven and reduce heat to 350.
Lightly beat eggs, then add cream and seasonings. Spread filling ingredients in partially baked shell. Pour egg mixture. Bake for 35-50 minutes. Let stand 5-10 minutes before serving.
Filling ingredients ideas:
Quiche Lorraine: 6 slices crisp bacon, crumbled, 1 cup shredded Swiss cheese, 1/4 cup minced green onion, 1/4 cup green and red pepper strips, 1/4 tsp ground nutmeg and dry mustard.
Mushroom quiche: 1 cup sliced mushrooms, sauteed, 1/2 cup shredded cheddar cheese and 1/2 tsp dry basil.
Shrimp quiche: 1 cup cooked shrimp or crabmeat, 1/4 cup shredded cheese, 1/4 cup chopped onion and green pepper, 1 tsp dry tarragon.
