4 cups shredded green cabbage
1 medium cucumber, thinly sliced
1 cup coarsely shredded carrot
1/2 cup diced red onion and green bell pepper
1/4 cup cider vinegar
1 tbsp Dijon mustard and vegetable oil
2 tsp prepared horseradish
2-4 tbsp sugar, to taste after whisking
1/2 tsp pepper
1/4 tsp salt

Combine first 5 ingredients in a large bowl; toss well.

Combine remaining ingredient in a jar, cover tightly and shake vigorously. Pour over salad; toss gently.

Cover and chill 8 hours. Serve chilled or at room temperature.
