2 tbsp flour
1 tsp salt
1/2 tsp pepper
2 lbs beef stew meat
2 tbsp canola oil
1 onion, chopped
2 ribs celery, cut into slices
2 tsp thyme
2 tsp marjoram
1/2 cup red wine
2 cans 14 oz each beef broth
1 bay leaf
3 carrots, cut into pieces
1 parsnip, cut into pieces
1 1/2 lbs potatoes, cut into chunks

In bowl, combine flour, 1/2 tsp salt and 1/4 tsp pepper, add beef, toss to coat. In pot heat oil. Add beef, cook until browned. Remove beef, set aside.

To same pot, add onion, celery, thyme, marjoram, and remaining salt and pepper. Cook until onion softens. Add wine, broth, bay leaf, and reserved beef, reduce heat simmer uncovered 30 minutes. Add carrots, cook 20 min. Add parsnips and potatoes, cook 40 min. or until beef and veggies are tender. MAKES 8 CUPS.
