1 red bell pepper, chopped
1⁄2 small Vidalia onion, chopped
1 clove garlic, minced
1⁄2 cup dry white wine
2 cups heavy whipping cream
1 (8-oz) pkg cream cheese, cubed
1 (8-oz) pkg Velveeta cheese, cubed
1 lb lump crabmeat, picked free of shells
1 (4-oz) can chopped green chilies
1⁄4 cup fresh lime juice
1⁄4 cup minced green onion
1⁄4 cup minced fresh cilantro
1 tbsp taco seasoning
1 tsp chili powder
1 tsp salt
1 tsp crushed red pepper
Garnish: fresh cilantro
Tortilla chips
In a 4-quart saucepan, heat olive oil over medium heat. Add red bell pepper, onion, and garlic. Cook for 3 minutes. Stir in wine, and cook until liquid is reduced by half, stirring frequently. Add cream, cream cheese, and Velveeta, stirring until thickened. Stir in crabmeat, chilies, lime juice, gree
n onion, cilantro, taco seasoning, and chili powder; simmer for 15 minutes. Add salt and crushed red pepper. Garnish with fresh cilantro, if desired. Serve hot with tortilla chips.
