12 boneless skinless chicken thighs
2 cups dry, seasoned bread crumbs
1/2 cup grated Parmesan cheese
1 tsp salt
1 tsp onion powder
1/4 tsp cayenne pepper
1 cup butter, melted
Cut chicken into 1 inch cubes. Mix together bread crumbs, Parmesan cheese, salt, onion powder and cayenne. Dip chicken into melted butter; roll in bread crumb mixture and place on ungreased cookie sheets in single layer. Refrigerate until ready to cook. Preheat oven to 375. Bake for 15 to 20 minutes, turning once. Makes about 80 pieces.
