1 cabbage, finely chopped or shredded
2 small carrot, grated
1 red pepper, finely diced
1 cucumber, peeled, finely diced
1/4 red onion, finely diced
2 stalks celery, finely diced

Dressing
3/4 cups light mayonnaise and salad dressing
2 tbsp olive oil and wine vinegar
2 tsp Dijon or hearty mustard
Fresh ground black pepper
2-4 tbsp sugar, to taste

Add all the cut vegetables to a large bowl. Whisk the dressing ingredients together adding sugar and taste for sweetness. Pour over the coleslaw and mix well. Chill for about an hour before serving.
