1/4 lb bacon, fried and crumbled
1/2 cup chopped onion and celery
1/4 cup chopped green or red bell pepper
2 cups rice, uncooked
2 (16 oz) can tomatoes, pureed
1 tbsp salt
1/4 tsp pepper
1 tsp sugar
1/8 tsp hot pepper sauce
Saute vegetables in bacon grease until tender. Add rice, tomatoes, crumbled bacon and seasonings. Cook on top of stove for 10 minutes. Pour into a large, greased casserole dish, cover tightly and bake at 350 for 1 hours.
