16 small white onions, about 12 oz
1 cup tomato juice
1 tbsp cider vinegar
3/4 tsp dry mustard
1/8 tsp pepper
1 clove garlic, crushed
1 lb fresh firm-fleshed halibut steak, cut into 1 inch cubes
2 medium green bell peppers, cored, seeded and cut into pieces
16 small mushrooms, stems removed
In a 2-quart saucepan over high heat, bring 1 inch water to a boil. Add onions; reduce heat to medium. Simmer, covered, 10-12 minutes until tender. Meanwhile, heat broiler. Spray large broiler pan with cooking spray.
In a saucepan, combine tomato juice and next 4 ingredients; bring to a boil over medium-high heat, stirring occasionally. Reduce heat to medium; simmer 4-5 minutes. Remove from heat.
When onions are tender, drain and allow to cool enough to handle. Peel and set aside. On skewers, place fish cubes, alternating with vegetables. Place kabobs on prepared pan; brush generously with sauce. Broil kabobs, 5-6 inch form heat source, 6-8 minutes per side until fish are cooked through, brushing occasionally with sauce.
